Trail Mix
Trail mix is such an amazing snack! I feel like it’s been forgotten about in the of mix of all the cute little energy bites + bliss balls that have become so popular. If you’re someone who always caves and buys something to eat while you’re out, this is the perfect remedy. Here’s your reminder of how simple, nutritious and delicious a trail mix can be.
When making your own trail mix (or even purchasing pre-made), keep in mind that this snack can be higher in concentrated sugars because of the dried fruit and chocolate chips. If you want to modify this recipe (which is highly encouraged – get creative!), ensure that you keep the ratio of nuts/seeds to dried fruit/chocolate chips at around 2:1. This will help keep your blood sugar levels balanced – the most beneficial way of snacking!
Makes 7.5 Cups (approx. 25-30 servings):
Ingredients:
- 1 cup pumpkin seeds
- 1 cup almonds
- 1 cup walnuts
- 1 cup cashews
- 1 cup coconut flakes
- 1/2 cup organic raisins
- 1/2 cup golden berries
- 1/2 cup goji berries
- 1/2 cup white mulberries
- 1/2 cup of cacao nibs OR dark chocolate chips (I like these ones)
Directions:
- Combine all ingredients and store in an airtight container (in fridge if possible)
Note: One serving is approx. 1/4 – 1/3 cup
